FIG CAKE

Nancy Oliver2 cups of self rising flour
1-1/2 cups sugar
1 teaspoon of nutmeg
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon salt
1 cup cooking oil
1 cup milk
1 teaspoon vanilla
3 eggs
1 cup mashed fig reserves
1cup chopped pecans (optional)

Mix all the ingredients in a large bowl. Pour into a greased 13 x 9 casserole dish and then bake at 325 degrees for 1 hour or until set. Insert a toothpick to check if the cake has set. If it comes out cleanly, your cake has set.

Deliciously sinful when served warm with a scoop of vanilla ice cream.
